I was recently asked this question at another site, and answered thus:

If we’re being realistic, it’s highly unlikely the Enterprise-E spent a lot of time on the front lines during the Dominion War. I’m sure she led or participated in a number of high-profile missions that were carefully calculated to maximize her fame but minimize her exposure to genuine peril. As Starfleet’s flagship and the Federation’s guardian angel, it would have been a tremendous blow to morale were she lost in combat, and the Dominion would have been focused on eliminating her for precisely that reason. Considering the Jem’Hadar’s favored tactic of ramming starships with their ‘battle-beetle’ attack craft, the Admiralty would not have been keen on exposing their showcase vessel to ignominious destruction.

I’m sure she did more than her share (and that such on occasion required ship-to-ship combat with Dominion and Cardassian assets), but that almost certainly consisted, for the most part, of diplomatic missions, critical exploration and intervention far from the fighting.

We saw in Insurrection she seemed to spend a lot of her time in the war on PR and diplomatic assignments. Who better to send out and drum up support for the Federation than one of Starfleet's most prestigious Captain's on one of the most famous ships? Also with the tactical strength of the Sovereign-Class she'd be able to cope on her own whilst the majority of the fleet were fighting the Dominion.

agree with both, and i believe that's what happened in the novels more or less (either diplomatic or scientific missions).

I would say early on she was on the frontlines, but quickly would have been a high-value target for kamikaze runs, and her movements would be watched closely. Anywhere she showed up would have resulted in a heavy response from Dominion forces. Starfleet could have used her to move enemy forces around for a bit, but the Dominion would have caught on.
Reinforcement wing, supply runs, escort duty.... putting her on the frontlines would have been too risky shortly into the conflict. So shoring up the rear lines to free more vessels p for combat would be a reasonable assumption.

A few throwaway lines, or an Okudagram during DS9 would have been nice. Hearing that the Enterprise-E had been badly damaged and towed somewhere for repairs after the Battle of Tyra would have sunk the loss in more in my mind. What would it have cost to see a badly damaged CGI image and a two minute Patrick Stewart cameo from a burnt and smoky bridge giving a status report about the remnants of the Seventh Fleet?

How Starfleet justified not transferring her ridiculously senior and talented crew throughout the Fleet... you had THREE Commanders Bridge Officer Certifed! )wtf(
They pulled Sisko off the Defiant and left it in the hands of a Science officer two ranks junior, without a single Command officer aboard! Shoehorning Riker into her center seat, affixed with the 2370s version of superglue was a no-brainer.


In the books and comics she performed a few war-related missions:
* Stardate: 51701.3 The Enterprise was ordered to the homeworld of the Gorn, where Picard attempted to recruit the lizard-like race into joining in the war against the Dominion. (TNG comic: "The Gorn Crisis")
* Stardate: Unknown (late 2374) The Enterprise was dispatched to Betazed to liberate the planet from the Dominion. Assisted by Commander Elias Vaughn of Starfleet Intelligence, Counselor Deanna Troi made some of the most difficult decisions of her life to save her home. (TNG novel: The Battle of Betazed)
