What role did the Enterprise-E play in the Dominion War?

I was recently asked this question at another site, and answered thus:

If we’re being realistic, it’s highly unlikely the Enterprise-E spent a lot of time on the front lines during the Dominion War. I’m sure she led or participated in a number of high-profile missions that were carefully calculated to maximize her fame but minimize her exposure to genuine peril. As Starfleet’s flagship and the Federation’s guardian angel, it would have been a tremendous blow to morale were she lost in combat, and the Dominion would have been focused on eliminating her for precisely that reason. Considering the Jem’Hadar’s favored tactic of ramming starships with their ‘battle-beetle’ attack craft, the Admiralty would not have been keen on exposing their showcase vessel to ignominious destruction.

I’m sure she did more than her share (and that such on occasion required ship-to-ship combat with Dominion and Cardassian assets), but that almost certainly consisted, for the most part, of diplomatic missions, critical exploration and intervention far from the fighting.

We say in Insurrection she seemed to spend a lot of her time in the war on PR and diplomatic assignments. Who better to send out and drum up support for the Federation than one of Starfleet's most prestigious Captain's on one of the most famous ships? Also with the tactical strength of the Sovereign-Class she'd be able to cope on her own whilst the majority of the fleet were fighting the Dominion.
